Caprese Bites with Basil Vinaigrette

This week’s recipe is a quick and easy appetizer that you can serve at holiday get-togethers, potlucks or anytime really! They can be made well ahead of time and require no cooking, which is always a plus in my world. Two of the main ingredients for these delicious little bites are on sale at No Frills this week, Salami for $4.97 & Bocconcini (which are little Mozzarella balls) for $3.77. The vinaigrette uses quite a bit of fresh basil, which can get pricey during the winter, so if you’d prefer to use a bottled dressing, you can. You can also substitute Pepperoni or Chorizo for the Salami. I buy the stick type, slice it into 1″ thick pieces, then quarter those pieces.  I made these a lot this past summer and they disappear quickly!

Ingredients: 

12 Bocconcini cut in half to make 24

24 pieces of salami

12 cherry tomatoes, halved

1/3 cup olive oil

1 Tbsp balsamic vinegar

1/4 tsp garlic powder

18 basil leaves

salt & pepper to taste

24 round toothpicks

 

Method:

Spear 1 piece each of the Salami, cheese & tomato onto a toothpick.

In a food processor or blender, add olive oil, basil, balsamic vinegar, garlic powder & salt & pepper. Pulse until smooth. Drizzle over the Caprese bites. Keep chilled until served.
