Ratatouille with Baked Eggs

You may have realized by now that I am a big fan of quick and easy weeknight meals and this recipe is no exception. It also makes great use of many of the wonderful fresh vegetables that are at the farm stands right now. You can make this dish with the eggs or leave the

Chilean Comfort Food

We have all been eating fresh corn for several weeks now, and relishing every moment, knowing how brief is the corn season. But since corn is on sale this week at No Frills for $1.56/dozen, this is a good time to do something beyond corn-on-the-cob. A classic corn dish in Chile is called Pastel de

Egg Roll in a Bowl

This weeks recipe is one of my go-to weeknight meals. It is quick and easy and makes use of one of my favourite budget friendly meats, ground pork. The pork is on sale this week at Metro, a 1 pound package for $5.99. To me, that is a little on the pricey side, but still

7-Layer Ranch Salad

Easy Cheesy Cauliflower Bake

My grandkids love cauliflower and broccoli as long as it is cheesy. Cheddar makes everything better, right?  This is an easy recipe that kids and adults will enjoy and it is so much healthier than cheese whiz! You can pick up some cauliflower at No Frills this week for $1.97 per head and whip up

Local Summer Squash

Summer squash is here! Not yet in our local gardens (not mine anyway), but available at the supermarkets. Ontario summer squashes, both yellow and green (zucchini) are on sale at No Frills this week for $1/lb. I love to grill summer squash, simply slicing it lengthwise, coating it with a little olive oil and salt.
