My grandkids love cauliflower and broccoli as long as it is cheesy. Cheddar makes everything better, right? This is an easy recipe that kids and adults will enjoy and it is so much healthier than cheese whiz! You can pick up some cauliflower at No Frills this week for $1.97 per head and whip up this tasty side dish. Side note: if you, like me, have refused to buy celery for the past while because of the insane price of $6.97, it is down to a much more reasonable $2.97!
1 large head of cauliflower, cut into bite size pieces
1 tsp. salt (for water you will boil cauliflower in)
2 Tbsp. butter
1/2 cup grated parmesan
2 cups grated cheddar
ground black pepper to taste
Preheat oven to 375 degrees.
Bring water to a boil in a pot that is large enough for all the cauliflower. When water comes to a boil, add the salt and the cauliflower. Lower heat slightly and cook for 5 minutes. Drain the cauliflower very well in a colander.
Once the cauliflower is well drained, place it back into the pot you cooked it in and then add the butter. Stir gently to coat. Add 1 1/2 cups of cheddar and the parmesan cheese and pepper and toss.
Place the mixture into an 8″x11″ casserole dish and top with the remaining 1/2 cup of cheddar. Bake 20-25 minutes, until the cheese is melted and lightly browned.
