This dish is great when you have a larger group to feed and can be made a couple of days ahead if needed. This week at No Frills, you can pick up 10 lbs of Russet potatoes for $2.97. The recipe calls for baking the potatoes, but you can easily use boiled, mashed potatoes instead, or go really crazy and substitute cauliflower! A lot of the other ingredients are on sale this week as well, such as cheese at Giant Tiger for $3.77, Sour cream at Metro for $2.99 and Bacon, also at Metro for $3.99. Here’s how you do it.
Ingredients:
7 medium potatoes, peeled, baked or boiled
4 oz. cream cheese, softened
2/3 cup sour cream
1/2 cup milk or cream
1/2 tsp garlic powder
1 Tbsp Parsley
2 cups cheddar cheese, shredded
2 green onions, thinly sliced
10 slices bacon, cooked and crumbled
salt & pepper to taste
Toppings:
1 green onion, sliced
2 slices bacon, cooked & crumbled
1/2 cup cheddar cheese, shredded
Method:
Preheat oven to 375 degrees. Mash warm baked or boiled potatoes with a potato masher. Add butter, cream cheese and sour cream. Mash while adding milk/cream slowly until a creamy consistency is reached. Stir in remaining ingredients (except toppings) then transfer into a 2 qt casserole dish.
Sprinkle with toppings, then bake for 20-25 until cheese is melted and potatoes are heated through.
Serves 10.
