Pasta with Sausage & Peppers

The Big $1 sale is on this week at No Frills and there are lots of great deals!

When my kids were growing up, there was no such thing as Pinterest or Facebook, so I was constantly looking in magazines and cookbooks for quick and easy meals that I could throw together on busy weeknights. I found this recipe on the back of a pasta sauce jar label and when I found out the kids liked it, it became a regular on the meal rotation.  There are lots of variations you can make by using different pasta,  vegetables or flavours of sausage, but this version was our favourite.

Here’s what you’ll need from No Frills:

Pasta  .97 cents

Italian Sausage  $2/lb (average package has 8-9 sausages for about $6.50)

Bell Peppers  $2/lb

Classico Pasta Sauce, $2

8oz Mushrooms  $1

bag of Dole garden salad  $1

 

Ingredients:

1 Tbsp oil

2 cups penne pasta, cooked and drained

1 medium onion, chopped

2 bell peppers (whatever colour you like), chopped into bite size pieces

1 8oz package mushrooms, sliced

4 mild italian sausages

1 jar pasta sauce

 

Directions:

Chop your onion and peppers and slice the mushrooms. Place sausages on a foil lined baking sheet and cook in a 350 oven for about 20-25 minutes, turning once or twice.  While the sausages are cooking, heat the oil in a frying pan and saute the vegetables for about 10 minutes, or until just tender and cook the pasta in boiling water until al dente, about 10 minutes.  When sausages are cooked, place on cutting board,  cut into bite sized slices, then add into frying pan with vegetables.  Drain pasta and add to mixture in frying pan.  Pour jar of pasta sauce into the pasta & vegetables and sausage, stir to combine.  Heat through for about 5 minutes.  Serves 4.

Dole salad is on sale for $1 per bag, and would be perfect to serve with the pasta.  The whole meal will cost approximately $12 and take about 40 minutes to get on the table.
