Pork & Egg Burgers

Ground Pork is a great value, often being less expensive than ground beef, although maybe not quite as versatile. I have a couple of ground pork recipes, with this one being a favourite for a quick weeknight meal. Metro has it on sale this week for $4.99/lb, so for less than $10, you can have a filling and nourishing meal. I have switched up the cheese in this recipe, using monterey jack and white cheddar instead of mozzarella. I also bake mine a little longer than suggested because my family prefers the yolks to be firm. Although the original recipe doesn’t include it, I add a teaspoon each of garlic powder and onion powder. Adjust it however you like!  Serve with a simple salad for dinner, or leftovers make a quick breakfast too.

Ingredients:

1 lb Ground pork

1 Tbsp Worcestershire sauce

2 Tbsp Parmesan cheese

1 tsp salt

1/2 tsp black pepper

1/4 cup shredded mozzarella

4 large eggs

Toppings:

1/4 cup shredded mozzarella

1/4 tsp black pepper

Method:

Preheat the oven to 400 degrees. In a large bowl, combine the pork, worcestershire, parmesan and spices. Knead the mixture until well combined. Divide into 4 equal portions. Form each portion into a ring (ring size approx. 4″, hole 2″) and place on a parchment lined baking sheet. Place some mozzarella inside each ring, then crack an egg into each hole over the cheese. Sprinkle the topping mozzarella and black pepper over each egg. Bake for 20-25 min. (30-35 if you like the yolks firm). Enjoy!

Serves 4.
